Since I am now on a serious budget, I have been cooking for myself a LOT more often. Here is one of my favorite staples that is easy AND very inexpensive. It is also perfect for the cooler weather. Just make sure you have a can opener!
- 1 can of black beans
- 1/2 cube of chicken bullion
- 1 cup of water
- 1 dash of cumin
- 1 dash of garlic salt
- 1/4 cup of shredded cheese (I like Monterey Jack)
In a medium sized sauce pan dissolve the bullion in the water. Add the black beans, cumin and garlic salt and bring to a simmer. Serve and top with shredded cheese.
I also like to spice things up and will additionally add hot sauce, cilantro, sour cream and/or salsa. It pairs perfectly with quesadillas.

3You know, I actually don't drain the beans. I just dump the whole can in there! I prefer the Goya black beans because I think they may be pre-seasoned and they are absolutely delicious.
4good to know! I just wanted to double check. I would have drained them.
5I made this last night for lunch today and it was delicious! I added more garlic to it (because I love garlic) and I don't think that there's a single drop left.
