This is one of those meals that I go to on those nights where I haven't prepared anything for dinner, but I want something fast and easy. It's a great meal that comes together quickly and, even better, it's something that you can personalize and really tailor to the likes and dislikes of your family. So, really, it can be as expensive or inexpensive as you'd like to make it!

Cheesy Fajita Quesadilla

Makes 6 servings.

1/2 lb. boneless skinless chicken breasts, cut into thin strips
1/2 cup salsa
1 medium green or red pepper, cut into strips
1/2 cup sliced onions
1 1/2 cups Cheddar Cheese
6 flour tortillas

Directions

1. Spray large skillet with cooking spray. Add chicken; cook on medium-high heat 5 minutes, stirring frequently.

2. Add green pepper and onion; cook 4 to 5 minutes or until crisp-tender. Pour in salsa and cook an additional 3 minutes or until heated through.

3. Place 1/4 cup of the chicken mixture and 1/4 cup of the cheese down center of each tortilla; fold tortilla over to enclose filling. Place on preheated griddle or skillet sprayed with cooking spray and cook 2 minutes on each side or until heated through. Fold over or cut-into wedges. Serve with sour cream if desired.

Variations

I love feta cheese, so I make quesadillas out of that rather than cheddar. I add a little garlic powder, a little onion, some crushed red pepper, maybe even some pesto sauce, and it's delicious!

My husband, however, loves to make almost a Chicken Club Quesadilla. It has bacon bits, tomatoes, chicken, and usually some onion. Definitely a favorite!

Tip for making it less expensive

Use whatever you have on hand. If you have some leftover chicken, tomatoes, or onion, use it! Quesadillas are great because you can throw just about anything in there and it works. So whatever leftovers you have, look in your fridge first and then to the recipe second!
